Deconstructed Fajitas (FP, S or E)

 (6 servings)

2 tbsp olive oil (or coconut oil)

4 cups chicken breast (cooked and diced) (optional dark meat for S)

1 tsp cumin

1 tsp salt

14.5 oz fire roasted tomatoes

24 oz seasoning blend (or 1 large onion and 2-3 green peppers, sliced)

2 tsp chili powder

1/4 tsp cayenne pepper (optional)

1 tsp paprika

2 heads lettuce, chopped


Toppings for E:

0% greek yogurt

brown rice or quinoa

tortilla 


Toppings for S:

avocado

sour cream

cheese


- Toss oil and seasoning blend in frying pan on high heat till soft.

- Add all ingredients except tomatoes, toss with veggies for a couple more minutes.

- Add tomatoes, cook for 2-3 more minutes.

- Server over Lettuce, rice, or in tortilla and add toppings.

- Enjoy!
